Quick, what's your favorite recipe that uses green beans?

I bought a bag of green beans at the Farmers' Market on Sunday, to make a curry with. Then I had dinner at my parents' house that evening, and they gave me a big bag of green beans from their garden. Between the two, the vegetable drawer at the bottom of my refrigerator is half-filled with green beans - and it's a big drawer!

Stoup:

1 lb beef stew meat
4 lg potatoes, peeled and cubed
1 lb green beans, cut to spoonable lengths
30 oz whole stewed tomatoes
6 lg carrots, peeled and sliced
2 lg onions, cubed
1 t garlic powder
1 bay leaf
water to cover
salt and pepper to taste

Put everything in 6 qt pot (or slow cooker on high). Simmer at least 3 hours. Better the second day.

I also like cooking green beans and using them like noodles, although it's one of the more college-y foods I eat. At least it's a fairly *healthy* lazy modification...

My old roommate used to make a really nice potato/green bean salad.

All there was to it was chopped up boiled potatoes and lightly boiled green beans (you could probably pitch them in at the end of the potatoes cooking for about two minutes) tossed with a healthy amount of pesto with a little extra olive oil and salt. It was served at room temperature.

I usually don't like green beans but I liked that salad.

Hm - steamed, then sauteed. Toss with a bit of teriyaki sauce and then sprinkle with toasted sesame seeds.

I often make stir fries with green beans.

There's also a Lebanese recipe for green beans that I really enjoy; it can be served hot or warm or cold and is yummy.

Thai Rice

Cook rice in broth with minced garlic and red pepper flake. Just before rice is done cooking, add green beans to blanch. After cooking, combine with crunchy peanut butter.

i like to sautee them in butter, kosher salt, toast some almonds, toss those in, and voila. num.

lightly sautee in butter and olive oil, salt, pepper, lemon, maybe a bit of garlic.

tempura fried is good, too.
