A few weeks ago [livejournal.com profile] rgeorge and I went to a fundraiser dinner/silent auction for Midwest Avian Adoption and Rescue Services. The best part of the dinner was this squash-apple soup they served at the beginning. Today is dreary and damp. The office and lab were really cold, so I've been chilly all day. Huddled at my desk in my wool coat, I started thinking particularly fond thoughts about that soup. So I went googling.

I found a number of recipes, none of them seemed quite to capture this soup but I think with some variations I might be able to create a reasonable duplicate. It was creamy and a little bit sweet, with rosemary and other herbs in it. If you have a soup that you think fits this bill, please send it my way. And if the recipe I'm varying from my googling works out, I'll post it.

I ended up kind of merging a few recipes I found on google for squash apple soup. It turned out well - not exactly like what I remember from the dinner, but a pretty decent substitute. I'll probably tweak this recipe as I make it again. This is recorded here as much for my own benefit - so I remember what I actually did - as yours.
