I ended up kind of merging a few recipes I found on google for squash apple soup. It turned out well - not exactly like what I remember from the dinner, but a pretty decent substitute. I'll probably tweak this recipe as I make it again. This is recorded here as much for my own benefit - so I remember what I actually did - as yours.
Butternut Squash Apple Bisque
Ingredients:
3 tbsp butter
1 butternut squash
2 apples
2 c. vegetable broth
1 c. apple cider
1 c. light cream
1 tsp thyme
1 tsp rosemary
1/2 tsp ginger
salt and pepper to taste
Directions:
Peel squash, discard seeds, and chop coarsely. Core, peel, and chop apples. Add squash, apples, broth, cider, butter, and thyme to large saucepan. Bring to a boil. Cover and reduce heat until squash is tender. Puree the bits of squash and apples in blender, in batches, until very smooth. Return to saucepan and stir in cream, rosemary, ginger, salt, and pepper.
Serves 6.
I am not 6, so if anyone wants to swing by this evening to distract me from tagging my econ notes with post-its and to partake of some soup, you'd be more than welcome. Otherwise I'll probably be seeing how well this keeps frozen.

four tablespoons of sour cream
lots of ginger
some black pepper
it was the sour cream that did it. i should have just used straight creme.
